Shala Chuan (look out for: 沙拉船 and many burger photos). A vegetarian burger stall in Gongguan Night Market with vegan options. Since it's a night market stall, it's very flexible (opens at ca. 4:30 pm and location can vary a bit, but you'll usually find it when you follow the market street). English menu available. Burgers and sandwiches with fresh vegetables and mock meat. English menu available. 30-50 NTD per burger. No seats available.

This stall has at least 4 different types of burgers. They have lacto-ovo vegetarian and vegan. The price is really good, and the size of it is medium.
I've notice the stall about a month and a half ago, and since then it's still at the same place: right on the side of a Timberland store.
Pros: Cheap, Variety, English menu
Cons: Not a great bread, It can be kind of dry

it is hard to complain for 50NT, but the sandwich I had was just okay. the bread was warm and soft, that was nice. but I'd rather spend that $50 on stinky tofu if I'm at a night market!

Cute little market stall - Edit
I was worried about finding this place since it is in the night market and doesn't have an exact address. We found it without a problem, though. The menu had 4 different burgers, 2 of them vegan (it might have had a few more not described in English). The vegan burgers were 50NT each, and both were yummy. It's super convenient from NTU, so I'm sure we'll be back :)
Pros: Inexpensive, Detailed English menu, Yummy
Cons: night market stall, so no seating
