They always have great vegan soups. Ask what is vegan; they're friendly, knowledgable, and helpful.

Yummy middle eastern, several vegan options - Edit
This stall inside Lund Saluhallen features vegetarian and vegan middle eastern food, with several items being vegan or easily made vegan. My aunt and I shared the lentil soup, vegan burger, and a few grape leaves, and had more food than we could eat between us! Portions are extremely generous. Good choice if you're visiting the Saluhallen.

Small lunch restaurant and take-away. The menu has soups, salads, toasts and heartier dishes from all over the world. The staff is friendly, and there are many vegan options.

delicious & sufficient portions - Edit
Took out lunch from there with a friend today. We shared a lentil-spinach soup (served with bread) and a lunch menu: a Moroccan vegetable stew that was delicately spiced with rice and salad. For Sweden, it was reasonably priced and you get a discount of 10 Kronor for take out. The staff was very friendly and understood immediately what vegan meant.

Cons: very limited seating
