The signature 11-piece set includes 'tuna' made from grilled red bell pepper, 'scallop' from king oyster mushroom, and 'unagi' (eel) crafted from teriyaki eggplant. Other creative toppings include vegan salmon roe (ikura), soy meat with corn, and tempura mushroom. Sets are served with miso soup and optional matcha drinks. Reservations are required for dine-in.
