One of my fav local Mex food vendors - Edit
Their empanadas are my fav, but also the pozole. The empanadas are huge and stuffed with potato housemate chorizo made from chickpeas! Then they load it up with pico de Gallo, cabbage, and sauces. Their pozole and albondigas are insane and I occasionally order family size portions of it. They do popups in So Cal, but also sometimes do pickup orders in Lynwood.

Good empanada - Edit
Big empanada but the textures weren't quite there. Was a pop-up at the weekly Meatless Monday event at Trademark Brewing in Long Beach.
