Uncle for Ramen - hits every time! - Edit
Uncle is both a longtime staple and one of my all time favorite ramen spots in Denver. The vibe is always on point with old school hip hop playing, and the energy feels fun but relaxed. Service is quick when dining in, and it holds up really well for delivery too.

The Khao Soi is a standout, a Northern Thai curry noodle dish with a rich vegan yellow curry broth, king trumpet mushrooms, chili jam, crispy noodles, red onion, pickled mustard greens, cilantro, and lime. It is deeply flavorful with the perfect balance of creamy, spicy, tangy, and crunchy. I always add crispy tofu to make it even more satisfying.
On the side, the Chilled Tofu is simple but so well done. Silken tofu served with a soy vinaigrette, ginger scallion, and wakame. It is light, refreshing, and a perfect contrast to the bold ramen.
If you like heat, add the Spicy Bomb, a roasted pepper miso paste that brings serious spice. It is no joke. One order is more than enough for a group.
Everything is packed with flavor and consistently hits. This is one of those places you keep coming back to.

Uncle is DELISH - Edit
They actually have 3 main dishes that are or can be made vegan. They have ramen that can be vegan, they have vegan Khao Soi, they have a cold sesame noodle dish that you can swap out the chicken for mushrooms and/or tofu. They also have 1-2 apps that are vegan. This place is totally worth the visit.

Delicious Vegan Khao Soi - Edit
So nice to be able to try a vegan khao soi - one of those dishes I miss after going vegan. I see that other reviewers were able to sub tofu when eliminating the egg in the veggie ramen, unfortunately, we were not offered that option. Nonetheless, a great spot to have a bowl of vegan ramen or khao soi.

When I want ramen, I go to Uncle. It has the perfect mix of hip vibes and delicious foods, and the staff is also impressively knowledgable. I'm always a little skeptical as a vegan in a ramen spot (there was recently a controversy in NYC about places calling their veg ramen vegan, only to later reveal that the noodles contained egg). However, the staff here has gone out of their way to alert me about which things are and aren't vegan. For example, the crowd-pleasing edamame appetizer contains honey, unfortunately.
Read moreAbout the ramen: Yes, the veg option typically contains an egg, but when you ask for it without an egg, they always ask, "Would you like tofu instead?" You can get the tofu either soft (steamed) or crispy (fried). I always ask for the crispy tofu and it is absolutely delicious. The veggie ramen comes with these really flavorful mushrooms that steal the show. And the best part: there's a special hot sauce on each table so you can make your ramen as spicy as you want!
