Best vegan options in Aztec, but bring your own containers

Tuanjai Thai Noodle is a charming little eatery in "downtown" Aztec and, considering the paucity of plant-based options in the area, it's probably the best bet for most herbivores passing through. While not quite as vegan-friendly as Boon’s Family Thai in nearby Farmington, it can put plants in your belly and satisfy the tongue on the way.

Tuanjai is minimally vegan-friendly just by virtue of being a Thai restaurant: the menu doesn’t clearly mark vegan options, but quite a few items can be prepared vegan by subtraction (ordering without meat, egg, fish sauce, oyster sauce, shrimp paste, and honey).

The pad kee mao (drunken noodles), for example can be veganized on request, and they’re satisfyingly tasty — though, as is common in many small-town Thai places, they aren't made with the customary thick-and-chewy rice noodles, but even with the substitute rice noodles here it's satisfying enough if one isn’t too fussy about authenticity or texture.

Before ordering a curry, best to ask if they have shrimp paste or fish sauce pre-mixed into the curry paste. If anyone gets a convincingly definitive answer, please post.

One thing that could be improved is offering brown rice as an option for those who prefer healthier carbs.

Another big improvement we wish they would make is ecological: they currently serve food in styrofoam containers and with plastic utensils, even for those dining in, so, until that changes, the only ecologically responsible way to eat here is to bring one's own reusable containers. Hopefully, if enough people politely raise the issue, they might switch to more eco-friendly containers.
