Prima tappa appena arrivata a Firenze, ed ultima prima di ripartire! I panini sono di una bontà unica, goduriosissimi, preparati con passione e cuore, e questo si sente tutto! Una genialata quella del "panaro" calato dal balcone, che ci fa tornare un po' indietro nel tempo... Sarà sicuramente tappa fissa ogni volta che ripasserò da qui!

During my bike ride, I deviated on purpose from my original route to pass by Firenze and test the inventions of this place. Totally worth! I ate two of their sandwiches and I can only say that I'm sorry I couldn't test them all. I wish I lived in the neighborhood to go there more often. Best sandwich I’ve had in ages - Edit
I got the Tan8 and S-Guanciale. I planned to try both and save half for later, but I started on the S-Guanciale and couldn't stop. It's like a stew in a bread bowl that you eat like a sandwich. So pleasingly spiced without overwhelming the flavors of the vegetables. The mix of textures of the filling inside the chewy, crusty bread was a perfect complement.

Veramente ottimo dal sistema di ordinazione al cibo, l’assistenza aiuta passo per passo a capire come ordinare e ritirare con l’orario che alla fine è indicativo essendo che viene fatto tutto sul momento, attesa che se non c’è tanta gente è minima, e infine il lampredotto vegano che è strepitoso, dove si sente la qualità dei prodotti e viene reso (non a pieno ovviamente) ciò che è il tipico piatto fiorentino, altamente consigliato

We went to Tripperia at 12:15 on a Thursday afternoon. The location is a little bit outside the historic city centre, but is accessible by the T2 tram from the central train station.

You order online (the website is available in both English and Italian) and the owners contact you via Whatsapp. We ordered for collection, so we received a message from the owners asking that we let them know when we were standing at the "bus stop" below the window. Once I did that, my name was called out from the first floor balcony. When I shouted back up that it was me, my order was prepared. Once it was ready, my name was called again, and the basket was lowered down to us on a rope. Our order was prepared pretty quickly, but there were a few orders ahead of ours (it gives you a number on the website after ordering), and it was definitely starting to get busy for lunch.
I ordered the trìììpe sandwich (medium spicy), and my partner had the Tan8 (not spicy, with green sauce), with a cola and a kombucha. Both were delicious, with really hearty bread. I can't say how closely they ressembled tripe or offal, but they were delicious in their own right. The total was €24 for two sandwiches and two drinks.
We ate at the bicycle benches in the car parking space across (which have bins and a bottle opener), and the owners even collected my glass kombucha bottle when I was finished (text them- they will lower the basket).

Abbiamo provato 3 dei 5 panini disponibili, uno più buono dell'altro, difficile stabilire un vincitore... Si ordina online indicando un orario di massimo, quando si è sul posto si avvisa con WhatsApp. Oltre ai panini ci sono bibite, birra, vino e dolci. Molto caratteristica la "calata" del cibo con il cestino. Si può consumare sul posto, naturalmente seduti in strada perché non ci sono tavolini. Noi eravamo di passaggio, ma torneremo sicuramente!

Ottimo per un pasto veloce e molto gustoso! Oltre all'originalità e la simpatia e gentilezza (e la bontà del cibo) funziona molto bene il servizio di prenotazione e tutto il resto. Dal sito puoi prenotare con personalizzazioni varie, pagare in modo facile e subito ti contattano tramite whatsapp per gestire l'ordine e la consegna. Molto semplice e immediato. Se si arriva in macchina il parcheggio è comodo. Noi facciamo spesso tappa a Firenze nei nostri viaggi ed è davvero una sosta comoda e soprattutto buona per chi vuole cibo gustoso, originale e veg.
