Decent Range of Local Options - Edit
This traditional restaurant (i.e., lokanta) has a decent range of vegan options. I enjoyed eating piyaz, a cold dish made of beans with a tahini-lemon-vinegar sauce topped with herbs and tomatoes (you should ask the eggs to be removed!). They bring complimentary appetizers such as pickles, salad, and bread before any order. Aside from piyaz, I ate ezogelin soup (a red lentil soup) and a pea dish with tomato sauce.
