Vegan food stall in the TOPS food court at Seacon Square. Look for the yellow and red flags, or ask someone to point to "jay" (veg) food. Food changes daily and is offered cantine style with rice. Rice with one dish cost starting at 30 baht. Also offers food to order like pad grapao (basil fried vegetables) and rad na (sticky noodle and vegetable soup) for around 40 baht each. No garlic or onion used. Open Mon-Sun 9:00am-6:30pm.

good food, unbeatable price! - Edit
I visited here several times during the week and weekend. The food is tasty, fresh, and well-prepared, about as good as you can expect from mall, food court cuisine. About a dozen dishes, takeaway available. $3 or less for a full meal. No English, pointing is ok.
I was told, but did not check, that the food court is open till 9pm.
Pros: quick, tasty, clean
Cons: no English, Small range

simple food - Edit
The mall has two food halls. Vegetarian stall is in the one near tops supermarket, on the basement level. The staff spoke no English and it was difficult to confirm that food is vegan but we finally managed with some help from other people. We ordered rice with curries and fried rice. Both dishes were very typical, nothing impressive. Prices are 35-45 baht. The stall sells no desserts or drinks.
Pros: inexpensive
Cons: no English

matimatik 18 Dec 2014 - Like I suggest to every vegan going to Thailand, learn what the "Jay" sign looks like (both Chinese and Thai letters). If you see it on something it must be vegan (also you can point to it and ask "is this jay?", and it usually sometimes helps to have a picture in your phone).
But be vary of some non-vegan, especially farang-operated vegetarian restaurants that might serve anything while having such a sign on the wall. But if it is farang-operated, they usually understand what vegan means.
