Oooh, I was so excited and relieved to find this place travelling through panama en route to Costa Rica!! Cuba’s airport was a barren wasteland for vegan food (bottled water was the only thing I found!) and the only thing Copa airlines had we could eat was crisps, so I was incredibly relieved to land in Panama and find this little sandwich shop directly outside the gate! They had clearly labelled vegan sandwiches on display, plus loads of pre-prepared fruits and veggies in an additional fridge. There was no plant milks for coffee , but plenty of fruit juices. It wasn’t the most catered-for I’ve ever felt, but to be able to make a safe choice whilst travelling for days on end was really amazing. The sandwich itself was HUGE. It was half a load of bread! It was hollowed out inside, and stuffed with a ridiculous amount of veggies, including aubergine/eggplant, pickles, carrots, alfalfa sprouts... there might have been some beetroot in there too. it was jam packed with veggies and such a welcome break from eating crisps!
