High class cooking - Edit
This gourmet has restaurant earned one michelin star and 16 gault millau points so you can expect great food. You don't know exaxtly what but that's not too unusual in haute cuisine. But do mention vegan when making a reservation, it's not 100% clear they're stocked otherwise.
