Great little truck!

Thyme and Change is a non-vegan food truck that’s been operating for a while. “Thyme and Change 2.0” is the name of a new food truck parked right next to the old one, and that one is entirely vegan.

They appear to have a menu that changes every day, much like the original truck. The offerings are different, however. They rotate through days of breakfast food, Indian-themed food, burgers (using the Beyond patty), and a sub sandwich day Monday to Thursday, and it looks like they repeat the Indian day on Friday. They now have this information listed on their website.

I’ve had a bunch of their food at this point. The breakfast day is my favorite, followed by the Indian-themed day. The biscuit and gravy was really good: thick peppery gravy on a fluffy, slightly sweet biscuit. Get it if you go there on a breakfast day. The Indian wrap and bowl are quite good. They use some kind of fried plant-based chicken that is good, though I could do without it, and the other ingredients are veggies, rice, a few beans, and some chutney (I highly recommend the cilantro chutney). I’m not a huge fan of the Beyond Burger for a number of reasons, but they do a decent job with toppings. The sub sandwiches are good, too, but suffer from a lack of ingredients aside from meat and cheese replacements.

If I had one complaint, it’s that some of the offerings lack a good quantity of veggies (or beans, in some cases). The garden breakfast sandwich offers a sad amount of spinach that screams “why bother?”, and I already mentioned the sub sandwiches’ issues.

This is a great vegan offering in the heart of campus!
