Clearly labeled options - Edit
I've been disappointed by the very few vegan options in the Coronado Springs resort. However, Three Bridges was an exception with a couple of great dishes. I got the corn dip and poke bowl. My server said the tofu in the poke bowl is usually deep fried in a shared fryer. She offered it uncooked and this was a great choice. The corn dip was also fabulous. They had a vegan fresh fruit sorbet dessert, which I was a little too full for, but I like my desserts a little more decadent than fruit anyway.

Roasted Corn Dip! - Edit
5 stars! One of the most vegan friendly restaurants I’ve come across at Disney! This place is definitely a hidden gem. Doesn’t take reservations, but you can park in the guest/convention lot at the hotel and enjoy. The roasted corn dip appetizer was smoky, creamy and delicious. Everything we ordered had great flavor, the service was wonderful, and we will definitely be returning!
