Excellent Stuffed Mushroom Cap - Edit
The vegan roasted beet stuffed mushroom cap was out of this world! I have had so many mushroom caps that are over marinated or soggy or undercooked in the middle. This was not only cooked perfectly, but the flavor was AMAZING! The broth was super tasty and the tomato relish, which I would have thought would not work, was the perfect balance for the dish. The vegan vegetable tarte tartin was also quite good. I could eat the stuffed mushroom cap everyday. It is probably the best thing I have had out in a very long time! You will not be sorry!
