One of the few, but delicious vegan options in Bishop - Edit
The options in Bishop could not be more limited, but thankfully what we do have we do well. My go-to is the Havana burrito with tofu, no cheese (queso). It is hearty and delicious. The staff is extremely nice, and as long as you don't go during a lunch rush the wait time is only around 10 minutes. They have always accommodated me and my vegan variations when possible. There is also a secondary Mammoth food truck location, but I have not been there yet.
