Only offered one salad roll - nothing else is vegan, staff quite unhelpful

Standard sushi restaurant - Edit
Teriyaki tofu was hot & freshly cooked and comes with a fresh leafy salad. Has lots of onion: be sure to ask if avoiding it. Staff seem proactive & aware of vegan requirements: they warned me the miso soup wouldn’t be vegan without me needing to ask.
