Delighted - Edit
The Happy Cow Delight Mac was awesome. Variety of veggies, hearty portions of beyond Italian meat, and ok vegan cheese amount (although I would have added just a bit more of the vegan cheese). Staff were sweet and thoughtful.

We used this place for an event. The pizzas are good, but not necessarily amazing. Mostly beyond and daiya. However, it’s nice to have options!

Happy Cow Delight Doesn't Disappoint - Edit
There are 5 vegan menu items on the Plant-Based menu. You can order one of these "as is", customize it according to your preference, or even create your own vegan mac & cheese bowl, vegan rice bowl, vegan pita sandwich, or vegan pizza. The staff are super friendly and helpful and want to make sure you leave satisfied.
Read moreThe "Happy Cow Delight" vegan mac & cheese bowl was outstanding and a total comfort food experience. It was served piping hot straight out of the brick fire oven. It was a perfect portion size that left me full but not overly stuffed. All of the ingredients worked very nicely together. The "Follow Your Heart" dairy-free cheese melted nicely giving it that gooey mac & cheese effect. The beyond beef meatball crumbles were cooked/toasted nicely and also had a great flavor. The artichokes added a nice ping every now and then.
The carnivores & vegetarian I ate lunch with said they were all very satisfied with the (non-vegan) food they ordered. We all agreed we would make this a go-to restaurant if we lived in town and will return next time we are nearby.

Great Mac and cheese and pizza options! - Edit
Bummed that we dug in before we got a picture, but they've got a great selection of vegan pizzas and Mac and cheese, way more than the obligatory bag of dairy free cheese that a lot of places with "options" have. Will definitely come again when we're in town!

Good Option for Red Wing - Edit
I was happy to find a good variety of vegan options here. The menu makes it a little hard to figure out what to order, but the staff explained that they can substitute vegan options for almost everything on the menu. It was somewhat expensive to get the vegan substitutes. I got the Philly Mac and Cheese with vegan meat and cheese substituted. I thought the food was pretty good, but my girlfriend said her wrap was a bit too salty. I suspect that if you look at their menu ahead of time and figure out what you want (like build-your-own), it’s a better experience, so give that a try if you’re in Red Wing.

Good pizza - Edit
We were in town for a wedding and were looking for somewhere sit down with vegan options. Landed on this place. Walked in and the owner was very focused and helpful and seemed proud of all the vegan options they have and excited because he knew they were on “happy cow”. Got a pizza (the larger option) enough to split between me and my husband and have a few left overs. We got a pizza with vegan cheese, impossible burger, spinach, sundried tomatoes, olives and artichoke. We were very pleased, it didn’t take long at all to be prepared and I enjoyed the pizza oven style crust as well.
