These folks are the best! I’ve had their food at different festivals, which has always been awesome, and just picked up some limited menu items before they get back to the farmer’s markets this year.

No Bones Christmas Dinner 🍽️ - Edit
Seven courses of true delight! First course Kohlrabi and leek soup. A delicate and savory soup. Twice baked Japanese sweet potato oh my! The. Tomato 🍅 braised cannellini beans, followed with potato crispy pot pie. Reimagined crispy Cesar salad green beans. Finish it all off with rosemary parker rolls and carrot budino for dessert. This meal was a delicious experience that ensnared the senses.

We’ve been following The Easy Vegan for years now. Their food at the farmers markets and pop-ups is incredible. We’ve also had great experiences at their pop-up dinners where they are able to showcase more of their fine dining, cooking, drinks, and overall service. They’re also just very kind, good folks. We’re lucky to have them in Denver!!

The soup was amazing!! Our favorite stop on the weekend at the farmers market. They won the great food truck race , and it shows!! I have never had anything bad!! Great drinks, today peach lemonade!!

I got the savory breakfast roll thinking it would be a pastry, not a savory cinnamon roll. It tasted good, but it was way too much bread per volume of topping. It was pretty unique though and kind of reminded me of an everything bagel with scallion shmear (but with too much bagel) I’ll be back to try more things, but probably not get this again.

The Easy Vegan catered our daughter's pre-wedding dinner. They worked with us to design a menu appealing to various palettes including vegan-suspicious people. Two weeks before the event, we learned that we had over 20 distinct food allergies. Taylor and Alexi created an experience that accommodated everyone.

Everything I've had from the Easy Vegan has been delicious, from their main dishes to their desserts! Their menu changes often, so it seems like there's always something new to try! The loaded elote-style potatoe is my personal favorite though! Their prices are a little high, but I don't blame them for that and it's totally worth it! If you see them around, definitely get something! You won't be disappointed!

Easy Vegan has a rotating menu that spans a bunch of different food genres/styles. Everything I have tried has been phenomenal, def one of the best vegan options in Denver if you're looking for dinner on a Sunday or Monday. Worth the slightly higher price range compared to some of the other dope local food trucks. Eating their miso butter loaded Japanese sweet potato with taro chips was pretty much how I imagine Scrooge McDuck feels swimming in his pool of money.
