The Cutting Board offers several freshly prepared WFPB-style items along with a bit of trendy junk food (e.g. Beyond burger) in a charming food court shared with several non-veg restaurants. Service was kind.

Delicious food and all Vegan - Edit
We decided to stop here after birding @ the reservoir and it was great. All Vegan in a cute food court type place. We tried the cauliflower wings and green chili fries. Both were really tasty. The lady working came over to check on us to see if we liked our food. Will definitely return!

Very friendly folks who are fully plant based. Nice mix between of options and they are very accommodating to any dietary ( less oil or no oil).

Everything was absolutely delicious! Hubby and I ordered, probably, half of the menu and NOTHING DISAPPOINTS! So good 😀! Please help us keep this gem open in Pueblo by giving it a shot!

Great options! - Edit
Favorites so far were the Mountainside sandwich, green chili nachos, broccoli, and fries. The BBQ cauliflower is pretty good but a little soft. The Brightside might be good with less mustard. Kid's burger is good! Most things are pretty good here, so it was disappointing to try the one or two that weren't so good. I definitely recommend!

All Vegan, in the Fuel & Iron Food Hall - Edit
On the corner of Union and E B Street in Pueblo is a gem of a plant based restaurant just what the weary vegan traveler is hoping for. Superbowl- tasty beans and cilantro lime rice with mango garnish and avocado. Delicious! Mountainside - beyond patty with aioli and roasted peppers on a ciabatta roll served with yummy fries. We left fully satisfied and satiated. Great service and a lovely crew working well to feed us plant based grazers.

Was so happy to learn my hometown gained this, and it did NOT disappoint! Perhaps the best green chili fries I've ever had- we ordered a few items off the menu and they were all superb.
