A couple of options - Edit
The Zen Salad is 100% Vegan as-is (greens, beets, and apples with balsamic vinaigrette). They have Beyond Burger options as well, just need to specify no mayo or cheese. Considering the limited options elsewhere, this place is at least trying!

Read morethey have no understanding of veganism, and really cannot follow a specific (and basic) breakdown of ingredients you give them to make it so.
We are three times there, each time thinking they would surely learn for next time.
However, they got worse not better, culminating in us being presented a ‘pizza’ with four or five vegetables literally rolling around the top of a piece of bread (despite the same people managing it on the second attempt the previous time).
Their one saving grace was that the
Manager did agree we should just part ways at that point and we’d go and find somewhere who had some basic listening skills.

Great guality produce, limited vegan options - Edit
Produce quality was great. A welcomed surprise considering Palau is a remote island country with limited shipments coming in. Unfortunately the vegan options are limited. Was here on a slow day for lunch, service was good and food was served not long after ordering.
