Found with happy cow while wintering in the RGV. Just now getting into happy cow and would like to tell everyone what a great place this was. My wife and I ended up eating lunch there two or three times a week this past winter. Really nice folks with great food.

Outstanding vegan food - Edit
We were in the Weslaco area for 2 weeks and ate here several times. Every pizza was outstanding, as was every dessert we tried. Outdoor dining option was pleasant and owners were cordial and went out of their way to make each visit wonderful.
Read moreNot a con but they buy their ingredients fresh every morning and make food until the ingredients are used up. So call ahead to give them your order and what time you'l be there, just in case.

Reggie veggie pizza = happiness - Edit
I ordered a personal sized Reggie veggie pizza and it was fantastic! I would’ve post a picture but I completely forgot to take a photo before I scarfed it down. 🥲 Today’s soup of the day was black bean soup and it was by far the perfect match with this delectable pizza. I would’ve purchased a vegan dessert but they had just opened when I got there; I love this shop/restaurant it’s the most amazing vegan friendly place in the valley!!

I am in love with this place! Service was impeccable. The food was amazing. And it’s just a nice vibe. We ordered the Reggie Veggie pizza and it came with complimentary soup of the day. They make their dough in house, as well as their pizza sauce and cheeze. Nothing lacked in flavor. They also had vegan sweets. I was able to get the last slice of tres leches cake which I haven’t had in YEARS. Definitely satisfied. Everyone was so friendly. Oh, and the kombucha had great flavor too! I got the Maui Mango.
