Okay option - Edit
Thai food is usually very easy for vegans, but Thai Kitchen has limited their vegan options to just 2 appetizers and 4 entrees when I was here - they won't or can't remove the fish sauce in anything else. The peanut sauce was not my fav, I like it stronger, but that's just personal preference! Pricey for regular portions.

They had some wonderful vegan options and could make many dishes vegan. Our dishes had so much flavor as well! Will definitely return next time we are stuck in I70 traffic!

Minturn is a tiny town but a few minutes' drive from Vail, Beaver Creek, and Avon, CO. This cute little Thai Restaurant is a family run business, and they make it a charming experience. There are a few explicitly Vegan dishes, and several others may be easily made vegan for you. Just ask. I had the Vegan Penang Curry; and Linda tried the Pad Thai Noodle dish made Vegan for her. Both were very flavorful. Parking is on the street in front of the establishment. Not inexpensive, but everything in the mountains is shipped in after all. We will return here on another visit to Avon,

Pros: Pleasant family run environment., Flavorful Vegan dishes and others on request., Cute little Colorado mountain town.
Cons: Not cheap, but it is in the mountains.

Lots of vegan options - Edit
Located just 10 minutes from Vail, this restaurant is a nice little gem right along Main Street in downtown Minturn. I visited during early mid September, so they had a summer menu, which had fewer options than what’s available during the winter, but still about 40-50% of their menu was easily veganized. The waiter was knowledgeable and able to show me each item that could be vegan.

Wonderful service - Edit
We are here while visiting our son in Avon and skiing in Vail. Family owned. The daughter was very appreciative and accommodating and as soon as I asked about making a few dishes vegan she went and got an all vegetarian/vegan menu. Great service. Great place to eat. We will definitely eat here every time we visit. Even the locals stopped to tell me how wonderful the food was.
