Gardener Bar and Restaurant Vegan Lunch - Edit
Family of 6 had lunch after hot springs and garden walk at the Gardener Bar and restaurant just outside the entrance to Terra Nostre. Homemade chickpea burgers were huge and delicious and served with fries. Wish there were more vegan options in the area, but it hit the spot!

Muito elegante e tudo mais mas mas pagar 26 euros num alho francês que não sabiam a muito, três colheres de molho que podiam estar um pouco menos salgadas mas que mesmo assim era a única coisa que dava sabor ao trato três rodelas de inhame que estavam excelentes mas não alimentavam um esquilo e uma única folha nabo que também estava ótima mas ainda assim não alimentava o mesmo esquilo.

Option végétarienne pour découvrir le Cozido traditionnel. Les légumes sont tendres et goûteux. Servis avec de la semoule et des pois-chiches, assaisonnés avec de l’huile d’olive, sel, poivre, herbes aromatiques. 20€ peut paraître cher mais c’est la seul possibilité d’accéder à ce plat typique. Le repas donne également l’accès au parc et au bassin de la source chaude.

I am a guest here at the hotel, so i found very easy after staying 2 hrs inside the healing waters to get the elevator and order the famous “cozido” vegan version. I read before that was simple steam veggies and couscous, so I asked for olive oil, salt and peper to give an extra taste and half a bottle of red wine from Alentejo “José de Sousa”. I have to be honest , everything was amazing ! The waters, the relaxed mood and the light dinner.

Looks good, waiters are pro, wine list is ok, the meat dishes appears to be good, then the only vegan option is the famous cozido in its vegetarian version: basically is steamed vegetables, unflavored cous cous and boiled chickpeas. Too poor for 20 euro.

Worth it for the experience - Edit
Like most others we ordered the vegetarian (which is also vegan) cozido. We ordered it the night before for the next day at 12:30 pm, so not quite 24 hours before as some write, but your experience may vary. If you go to the correct place by the lake at an appointed time, you can see them take giant metal containers with the food up from the ground. Be aware that to enter the area where they take it up costs 2€ per person. The cozido itself was a bit bland, but worth it for the experience. It is not a big culinary experience, though. The vegetarian/vegan cozido costs 20€, and you get a free entrance to the Terra Nostra Garden and the thermal springs within there for each 30€ you spend in the restaurant. So in theory each person receiving a cozido has to spend at least 10€ more on drinks or entrees to get free entrance afterwards. Entrances are otherwise 8€ each, but as you undoubtedly need something to drink with the meal anyways, it is wise to spend enough to get the garden entrance.

This place is amazing ! Yes they only have one vegan option and yes you have to reserve it 24 hours in advance but it’s SO Worth it . They cook the food in volcanic steam vents for 8 hours . So make sure you go to Furnas lake at 1230 to see your food being taken out of the ground . It really is delicious. The atmosphere is beautiful. Then you have access to the gardens and hot springs included! Plan for at least a couple of hours to walk around the botanical gardens and soak in the hot springs . It makes for a magical day . Worth every penny

We went to the Furnas at 12:30 to watch the staff take the cozido out of the ground. Warning: the smell is somewhat off putting. Had lunch at the restaurant at 1:30. Overall great experience !

Vegan cozido - Edit
We called in advance for the vegetarian cozido. You can also watch them remove the cozido from the lake if you show up around 12:30 if you eat it at lunch time. Predominantly slow cooked vegetables with a smattering of chickpeas on top of couscous.

I'm really glad that your cozido included entrance into the gardens. On my review I wrote it was not included after I asked multiple times and was told that it was not included in the vegan cozido price. Glad to see they changed the policy!

For anyone not aware, Cozido is a local stew-like dish made by slow cooking meat and vegetables for 5+ hours in the ground, allowing steam from volcanic activity to cook the food.
Read moreAfter a day of traveling around Furnas and seeing non-vegetarian cozido in every restaurant, I really wanted to find a vegetarian option so I could try this famous dish. I successfully found vegetarian cozido in the hotel restaurant of the famous Terra Nostra Hotel. You must call a day in advance and tell them that you would like to make a reservation for the vegetarian cozido - the restaurant only prepares the vegetarian version of the dish according to pre-orders. The experience of eating cozido in the fancy restaurant of the Terra Nostra hotel overlooking the famous gardens is very special.
The dish itself is a variety of local vegetables (cabbage, carrots, potatoes, sweet potato, broccoli, cauliflower, etc.) served on top of a couscous base with chickpeas. I felt that the dish could have used a little additional salt but I greatly enjoyed the experience of eating a local dish cooked in the ground. If your looking to try vegetarian cozido this restaurant is worth visiting. The price was 16 euros, including a bread and butter appetizer. I did not ask but I think the cozido may be vegan - you can try asking. In addition to the cozido, the menu includes a couple of additional vegetarian salad options.
It is worth noting that the vegetarian cozido does not include free admission to the garden that is written about on many forums (the non-vegetarian cozido comes with free admission to the garden but is also priced accordingly).
