Understanding - Edit
They understand dietary restrictions and are very accommodating. The vegetarian fajitas are delicious, but if vegan ask for no sour cream or cheese (for the side items). I've seen customers request taco salad with no meat with rice and beans substituted and no cheese or sour cream. They were very understanding and one server is pescatarian (eats seafood occasionally but mainly a vegetarian).
