Great sushi in Matsumoto - Edit
Superb sushi bar with an incredible sushi chef still working with a smile despite his old age. Staff speak English and can advise what is vegan. The tofu pocket is off menu but show them a picture and they can make it. No reservation needed but prepare to wait / come back later.

Good for dietarily mixed groups - Edit
I have to preface this by saying I don't really like sushi. My omni partner does, so I picked this restaurant knowing I would also have something to eat. Vegan items were clearly marked on the menu, which to be honest there weren't a whole lot. It was all fried food and sushi. I had the fried mushrooms, fried tofu salad, and natto maki, which were all decent. I was told the miso soup had fish in it and wasn't given a vegan version.

Pros: good food (even better if you like sushi)
Cons: limited options, cash only

Yummy clearly marked selection of vegan sushi and sides - Edit
Friendly staff. Small place reservations recommend they turned away a number of walk in customers. Clearly marked vegan options and good understanding of what vegan is. Staff are friendly and speak good English family run. Both the tofu salad and the eggplant and tofu salad were delicious. I enjoyed the natto maki and Nigri.
