Some vegan options inside the airport - Edit
Barry‘s is a coffee shop located inside the airport, in-between gates 141/117. They offer some vegan options like a panini with grilled vegetables and a vegetable wrap. Staff confirmed both items are vegan. Quite pricey, but normal for airports - paid 7,95 Euro for the panini which was actually quite tasty.
