i love souper salad because they have a multitude of toppings for salads, they offer baked regular and sweet potatoes and even have margarine that's vegan! sometimes they have soups that are vegan too! check local daily menu online, they also have all options clearly labeled vegan

Vegetarian dining options in Pueblo are very few. Souper Salad allows you to choose your own food from the salad bar and lists all of the ingredients in the soups so you can pick and choose to meet any food restrictions.
Pros: Inexpensive, A decent array of choices, Vegetarian friendly
Cons: tables are crowded together
