Vegan chile rellenos - Edit

When I went vegan, one of the things I missed was the cheese chile relleno. I was eating the cheese enchilada at Sol's and mentioned this to my server. She said they could veganize the relleno. Woot!
Next time I went, I ordered the relleno. Unlike the rellenos I used to have, it doesn't have the coating. However, that didn't bug me, because when I cut into my relleno, I had the gooey awesomeness of daiya and chile. Ever since, the chile relleno has been the dish that I order at Sol's.
The beans are pretty damn tasty. You don't miss the lard at all.
The rice is okay. Mix it with some salsa and some guac to give it a kick.
The chips and salsa are really good. For salt watchers, they don't externally salt the chips. I usually have to buy El Milagro chips at the store to get that taste effect.
If you've been missing your vegan tex-mex, trek to Sol's.
Understand that Sol's charges for daiya. Even if they sprinkle a miniscule amount on your beans, they still charge you. Unless you order something that has a decent quantity of cheese, ask them instead to leave off the cheese.

sol's has daiya - Edit

We just ate at Sol's Nieto Mexican Grill for the first time and it was great. They offer Daiya cheese and a faux sausage alternative. According to our waitress, both can be used in any dish. I had the cheese enchiladas with cheddar Daiya and ranchero sauce. They were excellent! My husband had the veggie burrito, huge filled with refried beans, veggies, and spinach. Refried beans and rice were on both meals and so good.
