There is the falafel which can be veganized easily putting into wrap, salad, or bowl. Just make sure you ask for it. For wrap, beware of the mayonnaise. Owner is really friendly and helpful.
Falafel and bread is 100% vegan. For the price (5$ which is more expensive than my home town), I would expect hummus or something that goes well with falafel but it was ok with tomato sauce. Mayo available for non-vegans.

There’s no fully vegetarian place on the beach, maybe on this island for all I know. Most of the resorts will do a veggie pizza or maybe-vegan fried rice, but they seem lacklustre and overpriced.
This place is on a block of shops just up some steps from long set pier. It’s round the back from the shops you see at the top of the steps.
I only tried the falafel wrap. It was great, the bread and falafel were freshly cooked. Pretty sure it was vegan but if you want to verify the owner(?) sounded Australian maybe and was an English speaker.

Pros: Fresh pita bread, Fresh falafel, Relaxed atmosphere
Cons: Serves meat but everywhere does
