Vegan options include edamame, trio of vegetarian kimchi, salad of hearts of romaine and mesclun, fried brussel sprouts (ask for vegan), vegetarian bao, shoyu tofu mushroom, chahan (ask no egg) and kinoko-mochi. Delicious Vegan Ramen - Edit
Absolutely amazing vegan ramen! I thought the flavor was excellent, the waitress was kind, and the noodles were so yummy! If you like spicy, get the fire sauce on the side!!

Great Vegan Food Until Menu Change - Edit
EDIT: This was one of my go-to spots for a few years, but for whatever reason they have changed the menu and the quality of their dishes has also gone down. Incredibly disappointing and therefore I've docked a star.

My absolute favorite dish in the city is the Kinoko Mochi (omit parmesan) - fat rice dumplings, japanese mushroom medley, asparagus, sweet bell peppers, kabocha, eggplant, scallions, and chili-soy sauce. So many fun textures and flavors going on in there.
Least favorite: Shoyu Tofu Mushroom - every other dish is bursting with flavor, and I find this broth completely lacking.
My recommended order for two: Kinoko Mochi, Chahan (omit egg), 2 veggie bao, fried brussel sprouts, and pickled vegetables.
The tofu is made in house, so make sure to try a dish with it included or add it on to any of your dishes. I don't see it on the menu, but there is a vegetable sushi roll as well (omit mayo) that is tasty.
The only thing vegan for dessert is sorbet, but it is made made in house so I still love it!
Note: make sure to let your server know that you're vegan, they are very accommodating and will help you order any of the vegetarian options so they're vegan. From my experience, the only difference is a sprinkle of cheese or mayo that's added at the end - so it's very easy to omit.
