I usually never give Mexican restaurants a try because there is almost always lard in the beans and butter or chicken stock in the rice but since this one was on Happy Cow, I gave it a try. I was really hoping for a vegan chimichanga, cause hey, that sounds fun! Unfortunately though it was pretty hard to make vegan. We asked about the beans and the waiter said that they do put lard in the black beans and the refried beans. So we ordered it without the beans and asked for veggies. When we got the food, there were beans in it, cheese was all over the top, and there were barely any vegetables in the chimichanga. So even if they made it fully vegan it would have just been a fried tortilla with rice in it since they didn’t put many veggies in it. We decided to send it back and get an order of fries so we could head out.
