Decent vegan options for Skagit County - Edit
A good stop if you find yourself in no-vegman's land half way between Seattle and B-ham. They have a salad bar usually with a vegan soup option. Deli items are marked V for vegan, such as marinated tofu spears, curry tofu, thai wrap, sesame kale, olive salad, sweet potatoes. For dessert, they always have a vegan cookie: raspberry almond, chocolate, or oatmeal sort. Also look for vegan coconut pudding. Beware of items labeled as "v w/h" if you are avoiding honey. Decent selection of vegan grocery items.
Pros: soup, cookies, salad bar, good local farm produce, good selection of CG juice

The selection is great.
A few points:
the local breads are non-og
lots of juices available in the back, nicely done
the deli is sketchy for vegans, nothing more than tofu but lots of meats etc
nice upstairs seating w wifi
staff is all super friendly
parking is busy
This place is ideal for staples and fresh produce, the juice bar in back. Forget the deli.

Great place to eat in Skagit - Edit
My wife grew up in Skagit County so I know that vegetarian options are not that great. However, the co-op is a good place to get a quick bite and also to support their natural/healthy food mission. They have a very good deli with hot and cold food, lasagna, soups, bread, etc. They also have a decent coffee/drinks bar. Although it is definitely casual, there is a large number of tables arranged around the deli and it makes for a very pleasant eating environment.

My favorite place - Edit
I've going to the co-op for years and I love it! I go in and drink tea and get something to eat and relax! They just started (not too long ago) to support breast feeding in the store-that's amazing!
Pros: excellent food, friendly atmosphere, there's something for everyone
Cons: it can get noisy durring lunch rush
