Great Thai option - Edit
Simply Thai is one of my favorite veg-friendly restaurants. Almost any dish can be made with tofu, vegetables, or TVP instead of a meat option. You also have options for the level of spice that you want (from 0-5, 0 being no spice and 5 being "Thai spicy") to further tailor your dish.
I've tried a number of the items on the menu. With the exception of the sushi (which was good but not outstanding), I would definitely order them again.

This place is great! There menu has lots of variety and you can always ask for something to be made vegan. Simply Thai can be very busy during dinner time, but carry out is always available.

Perfect vegan meal - Edit
The perfect vegan meal, steamed brown rice with steamed vegetables. My husband can get the pad Thai and be happy.

Flavor Powerhouse - Edit
Every dish was a flavor powerhouse, which I enjoyed immensely. A lot of restaurants rely on salt and sugar to get their food through, but Simply Thai vamped up their ginger and lemon grass and basil to bring the flavors to soaring points. The Tamarind TVP tastes like chewy french toast. Doesn't look like French Toast. But sure does taste like it. I ordered it last as a dessert.
They are super busy during the usual dinner time, so if you can, try to hit before the 5pm crowd.
They have bags and bags of Dominoes Sugar in the back next to the restroom. I'm not entirely sure what all they put it in, but Dominoes sugar is not vegan as they use bone char to bleach their sugar. If that's something you watch out for, be sure to ask in what recipes they use it in.

Simply Thai is fantastic...many say it is the best thai food in the city. It's affordable (about $10/person or less) and has a lot of vegetarian and vegan options. Make sure that you specify that you want lots of veggies...if you order a dish with tofu they will generally short you on the vegetables. This is one of my favorite restaurants in the 'Ville.
