JW Marriott needs to do better - Edit
There are very few intentionally vegan options and items that could easily be accidentally vegan are not. The service staff needs additional training on identifying options.

Best option for vegan or vegetarian at resort - Edit
The Signature Grill is located in the JW Marriott Starr Pass Resort, which is on the far outskirts of Tucson. There are about three restaurants in the resort. It is unlikely that someone would come to the resort solely to eat, but when at the resort the Signature Grill is the best option.
Read moreThe menu has a key for various dietary preferences, including gluten free, vegan, and vegetarian. Vegan options include an Ancient Grains Risotto with vegetables, which was my choice. While called "risotto," it was on a base of quinoa rather than arborio rice. The quinoa was moist and deliciously flavored. It was topped with steamed vegetables, primarily yellow squash. I was very pleased with the meal. The service was professional and attentive. My only concern is that my vegan meal was several dollars more than the meat burgers ordered by my dining companions.
Other vegan options were a salad that could be ordered as a side or an entree, and several ala carte sides (asparagus with blistered tomatoes, cilantro rice, BBQ sweet potato fries, mushroom & herb quinoa) which could be combined for a veggie plate. There are also dishes marked as vegetarian. I'm posting photos of the menu.
