Fresh and (Vegan) Friendly

Shibolim is in a residential neighborhood of Eilat, far from the tourist hubs. It is unprentious, but has a cute setting with some antiques and fake veggies giving it some warmth. It looks like a bakery with tables, but the menu is more varied than the classic Kosher Dairy menu, and you can see that the owners really attempted to be inclusive and have more options for Vegans.

We were the only ones there and our waitress Mor was very friendly and accomodating and the food came out really fast. We had Pizza with Vegan cheese which (if you like a thick dough) was tasty. I had the Tofu and Mushrooms Salad, which upon requesting they brought me a great vegan mustard vinaigette for. The tofu would have been better if it had been marinated before they cooked it, but it was still cooked decently and the salads and veggies were really fresh, it hit the spot. My kids ordered the Penne with Pesto Cream sauce and they gobbled it down. My better half ordered a sandwich which came with a pretty large side salad (for a side salad its as big as I've seen). The star of the show for us were the breads that came with the meal, they really have a good selection of fresh and flavorful breads.

Overall, the food was solid (but not spectacular) and while Shibolim is very down to earth, its a great place to get away from the craziness of Eilat, and enjoy a good, healthy, and hearty vegan friendly meal in Eilat.
