Worth the trip down the hill - Edit
This was our favorite restaurant in Cuenca, but it’s a little out of the way and hard to find. Google maps took us to the back of the building so we had to wander a bit to realize we needed to go down the stairs to the adjacent plaza. We ate every vegan and veganizable item on the menu, and they were all quite tasty. I’ve included images with descriptions & our rating for each choice we made. A couple of the items needed to have vegan specified, but were still delicious as they essentially just switched out the cheese for a vegan option. Definitely go here if you want a good vegan meal in Cuenca.

Si lo tuyo es la comida hecha en freidora, este es tu sitio. A mí, particularmente, que todo chorrease aceite y estuviese rebozado y frito me desagradó bastante. Eso sí, hay opciones veganas (fritas)

Hola Enrique, Lamentamos que esta haya sido tu experiencia, sin embargo es un poco extraña y nos parece un poco falsa teniendo en cuenta las opciones veganas que ofrecemos. Son pocos los productos veganos que tenemos para la freidora, de hecho me atrevo a decir que solo tenemos alchachofa rebozada y esta se acompaña con mojo picón, es decir, primero hay un tratamiento de los aceites y la ensalada césar vegana con el pollo vegano que, como sabemos, no es un producto muy recomendable para quienes son estrictamente veganos (es todo procesado, ¿no?). En la freidora no se elaboran productos veganos como el guacamole, los rollitos de mandala o el morteruelo vegano. (los primeros están crudos y los segundos cocidos al fuego). También tienes un curry vegano que no se hace con freidora y es con verduras naturales (no congeladas). Entonces esta queja no tiene mucho sentido ni parece muy cierta. Una vez más te pedimos disculpas y la próxima vez no elijas productos veganos procesados, sino productos naturales de base vegetal.

Read moreThere were a few vegan choices, plus the dish with aubergine turned vegan since they removed the egg from the recipe. We chose the salad and the Morteruelo (which is a veganized recipe from a traditional dish).
Everything was pretty good!! And the staff were super nice and helpful.
We were also told that they don't always do food in the evenings (at least for the season we went), unless you are a group of some people.

Probamos el tartar vegano, las patatas bravas, falso café miso y el curry rojo había varias opciones veganas más pero no disponible este día que fuimos. La comida bien presentada y rica. Critica clara es el precio muy elevado y la ubicación, está en una plaza bastante fea y el local muy sencillo.

After a massive disappointment with lack of vegan food in Cuenca we discovered Shambala. Menu had a good selection of innovative vegan options. Everything we ordered was beautifully presented and delicious. Friendly service. Definitely a great stop for vegans if you’re visiting Cuenca

Warmth and innovation - Edit
Óscar and his team were so warm, and they went out of their way to make us feel welcome. We shared two dishes, the vegan cheese platter (three types of nut cheese made in Castille-La Mancha, with a local berry jam and fresh strawberries), and eggplant "meatballs" over couscous with a light tomato sauce. Delicious and filling. As others have mentioned, it is located in a non-descript plaza in the new city. When we typed in the name of the restaurant, Google Maps took us there with no problem.

La comida muy buena. Los nachos (caseros) con guacamole espectaculares. Las albondigas bueeeeno, estaban bien, pero sin ser muy efusivo. El mandala roll fabuloso (también merece la pena). El morteruelo vegetariano (que es vegano) muy curioso (realmente distinto a otros platos más habituales). El dueño super majo. Se nota que pone pasión en su trabajo.

Eso sí, por ponerle un pero, el restaurante está un tanto lejos del centro (20min andando) y el local no es que sea acojedor. Un bar normal. Esa es la pega habitual de los restaurantes veganos/con opciones. No suelen estar en el meollo y es una lástima porque o acabas comiendo patatas en un sitio céntrico y mono o si quieres comer bien te tienes que alejar. Raro es que coincidan ambas cosas.

Es la segunda vez que voy, la primera pedí patatas fritas y morteruelo vegetariano y muy rico todo. De postre tiramisú q estaba rico pero no entendí la reconstrucción. Hoy he pedido la hamburguesa veggie (la vi la otra vez que estuve y llevaba con ganas desde entonces) Está superbuena, las patatas me han parecido espectaculares. Hoy se postre torrija, muy rica también.
