Amazing meals and house made fake meat, very unclear if vegan or vegetarian

The stir fried flat noodle (dried) and banh canh/pork drop rice noodle soup are my absolute favourites so far, so tasty and a great mix of veggies, tofu, and fake meat.
The servings are HUGE and I always have plenty to take away.
They sell their house-made fake meats by the kilo ($70 a kg!!), although the time before that they told me it was sold be the container ($10 for small and $15 for large). The bag I purchased ended up being $30!! Although it was absolutely DELICIOUS.
Everything else I've tried has been ok to good too, except for the Banh mi. Sadly, that is their worst dish now, they used to be a bakery that made their bread in house (and it was amazing, crunchy and soft). Now they source it from a nearby bakery, but because they stock it in the morning, it's not so crunchy by afternoon when I bought it. If they run out for the day, they advise you to go next door and buy a plain banh mi which they can fill for you (I would prefer doing this going forward as it ensures a fresh banh mi).
The pho has a lot of tendon-y textured fake meat, which is disgusting and also not tasty.
A major concern I had was the owner doesn't know for sure that the fake meat they source is vegan rather than vegetarian (I asked about the presence of milk) and she said she only knew for certain that most of the house-made fake meat is vegan (except for one she said she didn't know as she didn't make it). She said she uses fake meats that are sold in other vegan restaurants and doesn't always have time to check the ingredients (!! what the heck!!). The previously so called vegan Nhi Nuong which is nearby was completely clueless as to the difference, and the fake meats used here I haven't had at other places. To be on the safe side she advised having tofu and veggies only.

Pros: amazing house made fake meat, huge servings

Cons: they don't seem to know or care to find out , difference between vegan and vegetarian

Beautiful, healthy, delicious

I was so impressed by the presentation and freshness of my meal - one of the best ‘salad meals’ I’ve ever had! I will definitely be back.
