Best Veggie Pho. Period. 🍜 - Edit
New location at Five Points Shopping Center (3987 State Street) Separate Vegetarian Menu, on which many dishes are actually vegan, and a couple can even be made soy-free. The veggie broth is ginger and garlic based, and you can get the Turmeric Noodle Soup if you want a little kick. Will definitely stop here whenever driving through Santa Barbara (it's right off 101 where it meets 154), has outdoor seating, lots of space inside, and their portions are very generous.

Location permanently closed - Edit
Wasn't able to try it because the location on state street is permanently closed. Maybe other locations are open, but they aren't downtown.
