Saigon
Serves meat, vegan options available. Vietnamese food menu that's mostly meat stuff but will accommodate vegetarians upon request. Has a section of vegetable entrees. Say no fish or oyster sauce, and vegans ask for rice noodles instead egg noodles. Try the vegetarian flat noodle dish and the tofu. Open Mon 11:00am-10:00pm, Wed-Sun 11:00am-10:00pm.

Delicious and Plentiful Vietnamese - Edit
The veggie spring rolls are great, the vegetables are fresh and the sauces unique and varied.
Pros: Yummy, Great Vegetarian Options, Friendly Owner
Cheap Lunch - Edit
With lots of variety, you can't beat the lunch price. For 4.95, there are probably 5 or so veggie options on the lunch special menu. Watch out, thought, the soup you get is not veggie and you have to ask for a veggie spring roll.
The veggie spring roll is excellent and worth a stop in there for a snack of those sometime. Fried tofu, rice, thai basil, a little lettuce, and a wonderful peanut sauce to dip!
Pros: Veggie Spring Rolls., Cheap lunch!
Cons: No Veggie Soup., Entrees are quite similar
