Must visit this place if you’re in the area! - Edit
This place was absolutely amazing as a vegan! We paid ¥1800 per person for a delicious 10 course meal. You do need to call in advance to make a reservation and make sure you can get a fully veganized meal, otherwise I think your options are limited. We used this free Nagano translation service to make the reservation, 81-92-687-5289.

Good food but small menu if vegan - Edit
This is a small tofu restaurant with a range of set menus. You need to make sure you call in advance to specify vegan as they can make a lot of the dishes vegan if given notice. If you don’t call you’ll be left with a small set menu. Note that they’re unlikely to speak English so better to have a Japanese speaker call for you if you don’t speak Japanese yourself.
Read moreEach set menu comes with your choice of main, there are 4 that are vegan. Menu is only in Japanese but the mains have photos so if you don’t speak Japanese you can judge by the photos :)
We’ve been there twice and the food is really good. Unfortunately the portions are quite small (I didn’t even realize I had the main dish as it was similar size as the others). And the service is slow.
I would say it’s a good option to have in the area but I wish they had more vegan choices and faster service

One of our best meals traveling in Japan - Edit
We went here as part of a group tour after our guide learned we were veggie. They communicated our preferences to the staff who modified our set meal to replace all dishes with fully meatless ones. If you happen to be in/near Obuse to check out the Hokusai museum definitely consider this place! Would give 5 stars if I could.
