This was definitely the best Soba I ever ate, and find a Vegan option in Nikko, was sooo hard, which made this place even more special. The view is amazing, more than one option for vegans/vegetarians. Definitely recommend it.

Vegan options, tasty and great view - Edit
The restaurant offers a good variety of vegetarian/vegan options when you ask for the vegetarian option. It is indicated on their counter that you can have their broth without fish in it. We clearly asked if their was no fish, no dashi in the veg options and they said there wasn't.

Vegan Yuba Soba - Edit
Best view with a meal that I’ve ever had. We ordered yuba soba - a Nikko meibutsu (local specialty) - in vegan form. They advertise it as vegetarian, but when I asked if the broth was made with fish, the chef said no. When I asked if it was made with any other animal broth, she said no. When I asked if it was vegetable only, she said yes. I wish I had asked if it was kombu dashi, mushroom broth or soy sauce, but I missed that opportunity, unfortunately.

Fisch broth in „veg“ dish - Edit
We were really happy finding a place with marked vegetarian options on the menue, but as we got the food we figured out that they cook it with fish broth. So it’s not really veg or vegan. If you like fish it’s a good dish. If not, not.
