Good vegan bowl - Edit
I got the vegan bowl which was very filling. A choice of white or yellow rice with black beans, spinach, chimichurri sauce , and plantains ( baked). The Cuban bread is also vegan. They have a vegan "Cuban" sandwich which is nothing like a Cuban but another vegan option at least. It was $11 for the vegan bowl and $4 for the whole loaf of Cuban bread.

The vegan Cuban was shockingly good, and I would splurge on the vegan meat addition. It’s expensive but I was able to make two meals out of it since it was so big

Excellent vegan options in Blue Bridge! - Edit
I went here based on the awesome reviews I read online. It’s not that easy to find vegan options in Blue Ridge and Rum Cake Lady did not disappoint! The food is fresh and authentic. I went here two weekends back-to-back if that says anything.

Not Many Vegan Options - Edit
The "vegan" sandwich (only vegan food I saw on the menu) was $13 and just had spinach, plantains, and maybe some sauce? Didn't seem like much of a sandwich, but maybe that is just me. To get vegan "meat" on it was an additional $3. Their cuban coffee was delicious. The service was not the friendliest. Maybe I just went on an off day for them, but this is not a place I would go again.

Limited but great options - Edit
Really just have the Cuban sandwich and a bowl, but both are good. They have a meat substitute that they make in house, which is pretty great, and they also have sweet plantains that you can add to the sandwich or bowl.

The vegan Cuban sandwich was great. The bread was crunchy and delicious. The combination of the Cuban sauce, mustard, pickle, spinach and the grilled plantains added sweet, sour, and slight spice to the crunch of the bread. The restaurant is covered outside dining with Cuban music playing.

Great find!!! - Edit
What a great little find. Was visiting my family and didn’t expect to find any vegan food options but to my surprise this spot popped up 200ft from where I was standing. The owner is super sweet and it’s obvious she loves what she’s doing. Cuban vegan was certainly a nice change and would have never expected to find while up in the mountains. Will be back the next time I’m in town.

Would like to add that they added more vegan options to the menu and things that can be modified into vegan. Got the vegan bowl with rice, beans, spinach and plantains. Was really good!!!

Delicious But Limited - Edit
Although their options are limited, what they do have is delicious! I believe what can go into the vegan bowl/sandwich changes, so make sure you ask. Vegan meat is available, but I filled mine with veggies and sweet plantains.
