Vegan Menu - Edit
Rosa Linda's has it's own separate menu, just ask your server for it when you go in. It's a family owned restaurant and one of my favorite places to eat in Denver. The service is friendly, it usually isn't too crowded, and the food is delicious. They have vegan cactus tamales that are amazing. There is also a parking lot next to the building so you don't have to deal with street parking.

I order the large veggie combo which is a cactus enchilada, bean burrito, bean taco, bean tostada, and rice (with no cheese).
