On a 5 hour Layover! - Edit
Nice glass of wine and a leisurely place to eat. I found this treasure.
Read morePros: Tons of vegan options , The ramen is INSANE!, Don’t get hummus. Veggies limp, watery.
Cons: Staff is a bit blah. But the food made up for it, Definitely need bigger spoons for broth.

Delicious Banh Mi with country fried tofu - Edit
The Banh Mi with country fried tofu was so delicious, I will be sure to make my way out to Terminal C again for more. I told our server I was vegan, so he left out the Sriracha mayo. The Banh Mi and sweet potato fries came out with custom wooden flags marked "Vegan". There was some sambal cream cheese on the tofu, but I didn't think to ask if it was plant-based.

Pros: delicious banh mi with country fried tofu, plate flagged with custom "vegan" toothpicks, fast, friendly service

Good options for an airport - Edit
Not a destination restaurant but very nice to have in an airport. Some airports have nothing vegan at all. Root Down has a nice breakfast for the traveling vegan. I stopped here on a layover and was delighted to find their tofu scramble. Many other menu items can be made vegan. Menu has "V" next to items that can be made vegan.

I’m obsessed with their ramen(minus the egg) with a side of chicken fried tofu. The Tofu soaks up all the yummy left over broth.

Best airport food! - Edit
There were several vegan options on the menu. We tried the ramen and the veggie burger and both were tasty! Sweet potato waffle fries were mediocre, but everything else made up for it. We will definitely be back when we are in the Denver airport!

I love Vegan Options at the Airport - Edit
Having traveled through many an airport I am always happy to find a restaurant with vegan options. The staff is super friendly and helpful in pointing out what food and beers are vegan. The veggie burger was satisfying and who knew the jalapeno jelly could be so good. Its served with waffle fries. The portion was a little underwhelming for the price, but that's par for the course for airport fare.
Read moreThey have a great beer selection here and it appeared to be a spot where other airport bartenders stopped in before heading safely home.
I'll be stopping by the next time I have a layover here for sure

Forgot what it was like to eat real food at the airport! - Edit
The service was super fast & friendly! The layout was cute too—plenty of seating without feeling like we were eating in a Galleria food court. Our server cheerfully explained which items could be veganized (there were a number of options to choose from) and double-checked whether we had any allergen concerns before putting our order in. The burger was tasty (the jalapeño jelly!) and the coffee was... good?? Fresh vegan food AND good coffee? in MY airport??? I could cry. Give me all my layovers in DIA!

This restaurant has vegan soup, salad, entrees, and deserts. The Pasole soup and beet salad were amazing. I had the vegan burger and it was just ok until i asked for pickles to add to it.

Hot Vegan Meal, delicious!! - Edit
Had the beet root veggie burger and pozole. DELICIOUS!! Perfect for a layover. Staff is conscientious about timing for your layover, will pack to go. Burger comes out with a VEGAN toothpick, so you can rest assured your burger is vegan. Really cool atmosphere and decor. Will eat there again next time in Denver.

If only airplane food could come from Root Down - Edit
I love this place. It totally helps to create a better airport experience when I know that I can have a decent meal before a flight, especially when I know that I will have a LONG travel journey with (most likely) no options other than what I bring for myself.

Glad they tried to include us vegans - Edit
I had a tofu scramble burrito. It was OK, but was full of tofu and chili spice which made for an overwhelming rather than a tasty dish. I also got a chumus appetizer to go. It had kind of a peculiar taste because it was made with edamame beans instead of chickpeas, and because they put oil on the accompanying bread. Also, it all slid sideways in the overly large container. I was frustrated with the menu, but glad that they were trying.

so good - would give 5 stars if I could - Edit
While this is not a vegan only restaurant, the options that can be made vegan are clearly labeled. I tried both the beat salad and the veggie burger and both were excellent. This is the only place I want to dine at DIA for now on!

Best option for vegans at Denver airport - Edit
Root Down's original location is celebrated among Denver foodies for its creativity and farm-to-table freshness. The airport branch is a welcome addition, providing what's probably the most salubrious fare at the airport, and also a finer-tuned sensitivity for preparing food for vegans. It's in the heart of concourse C, which is a bit out of the way for most United and American passengers, but if you have a long wait it's worth taking the train over for a better meal.

clearly marked vegan options - Edit
Very busy restaurant in terminal C with clearly marked vegan options. Menu says marked items are vegan upon request, but I always let the server know I'm vegan in mixed restaurants. I had a nice salad with beans and arugula. also had a vegan veggie burger. I would have the salad again but not the burger.

Delicious food - Edit
We were here for dinner after our flight was delayed. A bit pricey. Burger was $15 included cross cut sweet potato fries. My adult daughter had the Bento Box ($22) too much food for her, extra eagerly consumed by her dad. I would eat here again.

A good choice for traveling vegans. - Edit
Surprised and relieved to find this gem at the Denver Airport! Service was good given that it was incredibly busy. Waited less than 10 min for a table at breakfast time. Ordered the tofu scramble and enjoyed it. I didn't really like the tahini however. The potatoes were tri color and really good. Dish came with a side of arugula with light dressing and it was a great touch. Boyfriend had breakfast burrito and liked it, but didn't care for the mole sauce.

vegan options at airport - Edit
Considering there aren't usually many vegan options at airports, it was nice to see vegan items cleared marked on the menu, both for breakfast and dinner. I arrived at 11am and opted for breakfast and the tofu scramble. It arrived with roasted potatoes and arugula. It was quite nice to have a proper meal before boarding my flight home. As it was so busy, I sat at the bar and the staff were nice and quick. If you are ever at DIA, check them out!
