Riverbank Slow Food
A cozy and subdued place run by mother and son, both are yoga practitioners. Offers healthy pasta, risotto, pizza, Japanese curry rice, and noodle soups. Chinese name is 河堤慢食, address 南投縣埔里鎮民生路122號. There is no obvious sign so it's a bit hard to find. Open Mon 11:00am-2:00pm, Mon 5:00pm-8:00pm, Wed 11:00am-2:00pm, Wed 5:00pm-8:00pm, Thu 11:00am-2:00pm, Thu 5:00pm-8:00pm, Fri 11:00am-2:00pm, Fri 5:00pm-8:00pm, Sat 11:00am-2:00pm, Sat 5:00pm-8:00pm, Sun 11:00am-2:00pm, Sun 5:00pm-8:00pm.

Not for Vegans - Edit
Like so many vegetarian restaurants in Taiwan, the owner of this place is just not interested in catering to vegans. When I first asked about vegan food the owner said that everything was vegan because they didn't use any dairy products in anything. When I asked about dishes with a photo showing cheese, she quickly added "except those ones, which all contain cheese". They do use fake meat, but she says it's all vegan. This sets alarm bells ringing for any vegan in Taiwan, since it virtually never is (unless it's from a vegan restaurant). She's not interested in actually figuring out what actually is vegan and is just saying everything is, so there's no way to know what (if anything) actually is safe to order, even if you can read and speak Chinese.
It looked like a nice place, but two stars because I wasn't able to order anything, even though I can read and speak some Chinese.
Cons: no way to know if anything is vegan
