First time being in New Mexico, I wanted to try some traditional New Mexican. I ordered the vegetarian burrito and asked to remove the cheese. When given the option of choosing the red or green chile, the lady was kind enough to mention that they make their green chile with some cheese, so red it was. Unfortunately, the only portion that had any flavor were the red potatoes I chose as a side, which were delicious.
The red chile tasted like watered down tomatoes and had no spice or seasoning. The lentils and beans inside were just as lackluster, possessing not a single pinch of seasoning or spice. My family had the same experience with their non-vegan dishes. Out of my 33 years of existence, never have I experienced food so bland. The only reason I don't give 1 star is that the wait staff were incredibly friendly and great at their job.
Menu includes a vegetarian section, and if you request to leave off cheese and sour cream, a few things can be vegan. We especially like the Flat Lentils and Brown Rice Enchilada with Posole. The red is pretty good here.
The hours are a bit short (closed Sunday, closed for dinner), so I don't come as often as I would like. Plenty of parking. We have never had to wait, even at lunch time on Saturday when they are pretty busy.

Cons: Not open for dinner or on Sundays, Not many options (but they are tasty)
