Serves meat, vegan options available. Restaurant of the Surrealist Garden of Edward James, it's inside the Las Pozas site, not to be confused with the Las Pozas restaurant that's in town. Vegans could get the lentil soup, bean soup, quinoa salad, and has vegetarian options like lasagna and aztec soup. A daily juice.

Not great for vegans - Edit
I went there at around 12:30 PM and they were still only serving the breakfast menu. There weren't really vegan options - I think there might have been a quinoa porridge with rice milk if you actually want breakfast. They were able to make me molletes without cheese - so basically bread, beans and pico de gallo. Staff were nice. When walking out I saw a stall advertising vegetarian tamales among the market stalls next to the entrance to Las Pozas, as well as signs for two restaurants that looked like they might be more veg-friendly (although only one seemed open when I was there), so you might like to check out the other options first.

This restaurant has healthy, well-balanced food which is a surprise after eating only chilaquiles, enfrijoladas and fruit salads in the Huasteca Potosina.
Their lentil soup is made with veggie broth and is delicious, and their quinoa salad is really rich. For vegetarians, the lasagna is the best option. Their "agua del día" is also really great.
