Only one vegan option. - Edit
I'll not say there are vegan options but just only one vegan option. By the way, the bread is served on a leather assiette. But yes, the vegan option is clearly labeled and the food is good.

Un régal - Edit
Un restaurant spécialisé dans le cassoulet qui propose un menu (entrée, plat, dessert) vegan ça fait drôlement plaisir, et c’est travaillé et bien pensé. Cuisine de qualité.

High quality vegan dish - Edit
One of two options on the menu clearly stated with the vegan symbol. I had the grain type with spirulina and it was very good!

Delicious food - Edit
Really delicious food in a lovely courtyard with helpful staff. It’s hard to find vegan or vegetarian options in France so I was really happy with what was available. But the choices were limited and the prices might put some people off.

Did not eat here. Too expensive. - Edit
Only two vegan options in the menu. And I find € 43,- for a cold tomato soup and a salad, way too much money, so I ate somewhere else.

Cons: Too expensive for my taste, Too little vegan options on the menu

Clearly labelled vegan options. Good food. - Edit
This restaurant has a few clearly marked vegan options on the menu! This is VERY unusual for a French restaurant in this region.
Read moreYou wont get much choice though, but simply having a couple of items available was wonderful. Our experience in the region was about 70% of restaurants have nothing on the menu a vegan can eat at all. And the rest offer green salad or chips (occasionally both). That's all.
Unfortunately their website doesn't show the vegan options, so I will add photos of the menus (Aug 2018) - see the Vegan logos to the left of a few items.
It is a classy venue, but with a relaxed vibe. The food is fancy and the price seems typical for this kind of food. The staff seemed quite flexible about drifting away from the set menus, so worth asking if you want to mix it up.
The lentil Salad was really excellent. The Sardinia pasta was nice, but not amazing. I will add photos. The non-vegans in our group seemed happy with their food.
It has a fabulous location in the middle of the Cité de Carcassonne, a restored medieval citadel and world heritage site. It has generous indoor and semi-covered outdoor seating, and friendly staff who all spoke very good English (and I think Spanish too). Bear in mind it can get busy.
As it's not purely veggie venue, max possible rating is 4 stars, so I'm giving 3 stars (fair) because although it was a good experience, and we certainly do recommend the restaurant ... it wasn't completely excellent overall.
Worth a visit if you are in La Cité de Carcassonne, and enjoy this kind of dining experience.
