Several options and great value for money - Edit
Located on the main street of La Santa, this place doesn't look like much from the outside, but it was definitely worth going inside. The menu lists some vegetable-based items, such as fried noodles (which were confirmed to be egg-free), fried rice, vegetable chop suey, mapo tofu, and a few others. The staff was friendly and the price is a bargain: I paid 7.40 euros for the fried noodles and half a liter of sparkling water.
