Surprisingly great taco place! - Edit
I was so impressed by the vegan tacos at this restaurant. However please note that none of them are vegan as is! For the cauliflower tacos you'd need to substitute the chipotle aioli and for the tofu sofritas you need to substitute the avocado puree. My waiter was very knowledgeable though and let me know about these swaps. I swapped out for the pineapple salsa which was super tasty, and the chimichurri which was INCREDIBLE. The salsas are also very fresh and delightful, and the margs and Palomas are great too. If you're up in Aurora near the airport and don't want to Uber all the way into Denver (which can be expensive), this is a great closer option. Highly recommend!

Not bad for a quick stop - Edit
Basic taco bar but the ingredients tasted fresh, and it was nice there was a vegan option since there aren’t many around the airport. The cauliflower taco would need to be ordered without the aioli. The sofritas had an avocado spread.

So Fast and delicious! - Edit
The waitress was educated about vegan options on the menu. I opted for tofu sofritas tacos and one roasted Cauliflower taco, which is vegan when the sauce is eliminated. The house salsa was incredible. I swear the tacos arrived at our table within 5 minutes of ordering, it was so fast! I was surprised with how delicious the sofritas were. I will definitely be visiting again next time I am in Denver.
